Booming sales for the 200 million kg per year processor Schwarzwaldmilch, collecting its milk from around 2000 small-scale farmers in the Black Forest region, has led to expansion in lactose-free production including yogurts and even lactose-free bio-butter. Less than two years ago the two-plant cooperative invested in new butter-making equipment costing € 2.3 million and the company says that already this is running at full capacity. Also experiencing increased sales is powder produced for the catering and manufacturing sector by the same processor in Germany’s southwest. New packaging lines are being completed this year to service demand from this sector which includes quark, full cream and yogurt powders.
