At FiE, fava beans were the highlight, with a reasonably pleasant taste and properties conducive to processing. There is also a push towards using citrus fibres, which is upcycled from the juice waste stream. Look out for a citrus fibre-bean product near you.

The World Cheese Awards winner is ewe

Despite the odds in favour of Switzerland – with five cheeses making it to the final – and with entries from Brazil, the United States, Norway, Italy, Germany and Spain, the Queijo de Ovelha did its country proud.
