IDF experts discuss milk enzymes

INTERNATIONAL – Experts met to discuss research into indigenous enzymes in milk and their wide range of functions at the first International Dairy Federation symposium on the subject.

Held at University College Cork in Ireland at the end of April, the meeting was attended by more than 120 scientists, industry representatives and postgraduate students, from over 30 countries. The three day symposium covered presentations and research updates on most aspects of milk enzymes, from phosphatases to proteinases, in contexts from mastitis to cheese-making.
