Whey for low fat products
A new range of whey protein concentrates for low fat yogurt has been introduced by Freisland Foods Domo and Nandi Protiens.
An agreement gives Friesland Foods Domo access to Nandi’s technology to produce whey protein concentrates for the dairy market and Friesland has been particularly keen to attract the low fat yogurt market.
One per cent of the new ingredient, which Friesland is calling DOMO Hiprotal 60MP, is said to replace three per cent of milk fat. According to the company, less protein is required to achieve the same consistency, resulting in lower ingredient costs.
