Traditional cheeses produced through natural ripening processes have continued to best all-comers in quality tests for taste on the Continent. The latest results from the Stiftung Warentest Institute in Germany tested 20 different Gouda cheeses sliced and packed by retailers or wholesalers before sale. It awarded an accolade for Gouda Beemster Mild produced by Beemster-Cono in the Netherlands, which has five weeks of ripening before being delivered to retail outlets. The Stiftung Warentest is an independent organisation that buys products anonymously before testing.
