Speciality cheese production in Wisconsin rose by 7% to 355m pounds, according to a recent report.

The US Department of Agriculture confirms this number, noting that the US state now produces more than 500 stypes of cheeses, and 77 of the 115 cheese plants in Wisconsin are manufacturing at least one type of speciality cheese.
