Emmi adds blue cheese in US

Swiss dairy group Emmi has acquired more capacity and expertise in the manufacturing of blue cheese in the US by purchasing a blue cheese production facility from the Great Lakes Cheese Company. The dairy plant in Seymour, Wisconsin, specialises in the production of premium quality blue cheese and produces just under 3.5 million kg of cheese annually.

The US is Emmi’s largest foreign market. The focus in this market is on the production and distribution of cheese. These are on the one hand exported from Switzerland and on the other locally produced cheeses, primarily from cow’s milk.

In addition, Emmi is creating more flexibility to develop and offer new formats and varieties of blue cheese, it says. Emmi also has US-based packaging plants, where blue cheese can be crumbled and packaged in cups for the retail trade or in larger portions for food service.
