Researchers collaborate on cheese flavour programme

EUROPE – Key researchers from France, the Netherlands and Denmark have joined forces in a 3.2 million euro project to control and manipulate cheese flavour development.

Known as FlavourAACEs, the project will involve mapping out the processes involved in cheese flavour development. A number of lactic starter cultures will be selected and screened using tools developed by two of the largest research institutes
