US cheese and butter production up

US cheese production during October amounted to 1.26 billion pounds, up 3.2% from October 2024, USDA’s National Agricultural Statistics Service (NASS) reported in the Cheese Reporter Cheese production during the first 10 months of 2025 totalled 12.16 billion pounds, up 2.2% from the first 10 months of 2024.
American-type cheese output during the January-October 2025 period totalled 4.83 billion pounds, up 3.6% from the same period in 2024. Cheddar output during the first 10 months of 2025 was 3.32 billion pounds, up 5% from the first 10 months of 2024. Italian-type cheese output during the first 10 months of 2025 amounted to 5.15 billion pounds, up 2.8% from the first 10 months of 2024.
October production of other cheese varieties of note included: Hispanic cheeses, up 11.9% to 43.1 million pounds, Gouda up by 14.4% to 6.8 million pounds, and Feta cheese dropping by 11.3% to 12.2 million pounds.
Production of whey protein concentrate, human, during October totalled 39.7 million pounds, up 0.8% from October 2024. Manufacturers’ stock of WPC, human, at the end of October was 43.2 million pounds, down 12.5% from a year earlier and 10.6% lower than a month earlier.
Butter output during the first 10 months of 2025 was 1.98 billion pounds, up 6.5% from the first 10 months of 2024. Yogurt output during the first 10 months of 2025 totaled 4.44 billion pounds, up 7.7% from the first 10 months of 2024. Cream cottage cheese production during October totaled 40.1 million pounds, up 10.4% from October 2024.
