California is ‘dynamic’
USA – California has the “the country’s most dynamic dairy industry”, according to Stan Andre, chief executive officer of the California Milk Advisory Board.
In a statement he said that California also “continues to set milk and cheese productions each year”. With four of the world’s largest cheese plants, including the world’s largest single-site plant, it is estimated that a fifth of US cheese production is in the state.
California’s cheese production has doubled over the past decade, setting a new record last year with output reaching 0.91 million tonnes. Currently the country’s leading milk producer and second largest cheese producer, experts reckon that California will pass Wisconsin in total cheese output in a few years.
