USA – Sales of milk and cheese per capita could fall in the USA by the year 2020, while yogurt sales may rise, according to a survey from the United States Department of Agriculture (USDA).

It is believed the changing demography and ethnicity of the country will affect the market share of commodities, but all food groups can hope to experience overall growth as the population increases by an estimated 50 million over the survey’s 2000-2020 time scale.

The drop in per capita sales for milk and cheese is down in part to the percentage decline anticipated for the white population. Race and ethnicity are a key part of food choices, and it was found that whites drink more milk both at home and away from home.

The survey, carried out by USDA’s Economic Research Service (ERS), based the projections on its Continuing Survey of Food Intakes by Individuals (CSFII) from 1994 to 1996 and 1998.
