IDF Bulletin No. 369/2001

INTERNATIONAL – The International Dairy Federation (IDF) has published a new Bulletin No. 369/2001 covering three different topics.

Cheese in all their aspects is an assembly of subjects from the IDF Analytical Week symposium held in Pellegrino, Italy, earlier this year. It illustrates the link between cheese, its geography and climate and looks in depth at cheese ripening and cheese tasting as well as factors associated with hygiene control.

The second subject under review is Detection of antibiotic residues in liquid whey and demineralized whey powders, which studies several different methods for the detection of antimicrobial agents in milk and milk derivatives. The final topic, Safety performance criteria for a microbiocidal step, is the work of the IDF task force and establishes alternatives to traditional heat treatments for producing safe dairy products.
