Household butter in portions
After conquering the catering market, wrapped butter portions are being increasingly sold for use in private households in Germany, according to the country’s largest market research company GfK group.
There, butter sales remain stable at around 6.5 kg per head in 2003 and 2004 but the high-fat dairy product has never lost its importance in the national diet. Last year, 91% of the 34 million households in Germany claimed to buy pure butter at least once per week. While only 0.5% of these private sales are in the form of individually wrapped portions or in multi-packs of 125 g blocks, the majority of household shoppers claim to be purchasing more of their butter supplies in this form, say the researchers.
The German range of butter offered to the normal shopper is broader than most in Europe, with top sales claimed by fresh cream butter, mildly soured cream butter and a product made with fully soured cream. On top of this, 1.6 kg of the per capita consumption is yoghurt butter, 1.4% is low-fat and 0.7% flavoured butter (mainly herbs and garlic flavours).
