Money in dairy

Expansion seems to be on the mind of British cheese makers, judging from this week’s news items. New production units and streamlining those units seem to be the work of more than one creamery here in the UK. I suspect that it’s being done to try and gain the advantage as more demand comes in from export sales. Which is a good thing. More cheese in the world can’t be a bad thing. Stilton in particular is an international favourite, and long may it continue.
Also in my good news column is the first year anniversary of the European Union’s Milk Market Observatory. As this system continues to collate data from EU member countries of dairy deliveries and output, it can only be to the good. Knowledge is power, after all. It may a bit like looking in the rearview mirror to see where you’ve been in some cases, but trends can be spotted and hopefully production tweaks made to serve the markets profitably. As the EU moves into unfamiliar waters, any information gardnered about what’s working and what’s not will be useful.
