Farmer ownership of milk processing capacity is growing, moving up to more than 30% of the total processed in the UK. The British cheese sector processes 61% of the milk used for products other than liquid milk, and 3.7 billion litres was used to manufacture 393,000 tonnes of cheese in the past year.
