Hard working class
Making cheese is not the easy option for a dairy processor, particularly in the more boutique operations. One often wonders why a person who is already in the business of farming dairy cows would bother - cows require a lot of work and care. Not to mention the business of running a farm. Today’s farmer not only has to be a good herdsman, but keep an ear to the ground of the market, and try to discern which way the prices are running, for everything from feed to waste disposal.
I was lucky to spend a bit of time with a group of cheese makers on Jongia UK’s Milan trip this week, and one participant explained why she opted for cheese over other dairy items such as yogurt or ice cream: “Animals require quite a lot of care and attention, and so do cheeses. It¹s lovely to see them both mature.”
Cheese making is hard work, but worth it. I couldn¹t agree more.
